Red Curry is a blend of dried red chilli along with spices such as ginger, lemon, garlic, shallots, peppercorns, coriander seeds and cumin seed which makes this red curry paste into a smooth reddish paste.

Instructions | Heat cooking oil in frying pan. Add the Red Curry Paste and fry till fragrance. Slowly add 3/4 cups of Coconut milk and fry till fragrance. Mix 1 cup of Coconut milk with water and stir well. Add the mixture into the frying pan. Add eggplant and kaffir lime leaves. Season with Fish Sauce and palm sugar. |
